茶摘みは、新茶の葉を摘み取る作業のことです。一般的に、春から初夏にかけて行われ、新茶の季節の到来を告げる風物詩として知られています。茶畑では、茶摘み着と呼ばれる伝統的な衣装を身にまとった女性たちが、やぶきたやあさひなどの茶の木から、やぶきた種やあさひ種などの茶の葉を丁寧に摘み取ります。摘み取った茶の葉は、蒸したり炒ったりした後に揉みこむことで、お茶独特の香りと風味が生まれます。
