A delicious and satisfying Israeli sandwich featuring fried eggplant, hard-boiled eggs, and a medley of flavorful toppings, all stuffed into warm pita bread.
Ingredients: 4 pita bread rounds. 4 hard-boiled eggs, sliced. 2 medium-sized eggplants, sliced into rounds. 1 cup tahini sauce. 1/2 cup amba sauce pickled mango. 1/2 cup chopped fresh parsley. 1/2 cup diced tomatoes. 1/2 cup diced cucumber. 1/4 cup diced red onion. 1/4 cup pickles, sliced. Salt and pepper to taste. Olive oil for frying.
Instructions: Heat olive oil in a pan over medium-high heat. Fry the eggplant slices until golden brown and tender, then drain on paper towels and sprinkle with salt. Warm the pita bread rounds in a toaster or on a griddle. Cut each pita in half and open the pocket. Spread a generous spoonful of tahini sauce inside each pita pocket. Fill the pitas with sliced hard-boiled eggs, fried eggplant slices, diced tomatoes, diced cucumber, diced red onion, and sliced pickles. Drizzle amba sauce over the fillings. Sprinkle with chopped fresh parsley and season with salt and pepper to taste. Serve the Sabich Sandwiches warm and enjoy!
