This sandwich combines the creamy goodness of guacamole with the bold flavors of Thai roasted tomatoes, creating a delightful fusion of textures and tastes.
Ingredients: 2 ripe avocados. 1 lime, juiced. Salt to taste. 4 slices of bread sourdough or whole grain preferred. 1 cup cherry tomatoes, halved. 2 cloves garlic, minced. 1 tablespoon soy sauce. 1 tablespoon maple syrup. 1 tablespoon sesame oil. 1 teaspoon Thai red curry paste. Fresh cilantro leaves, for garnish. Red pepper flakes, for garnish.
Instructions: Turn on the oven and heat it up to 400F 200C. Salt and lime juice should be mixed together in a bowl before making guacamole. Put away. Spread the bread slices out on a baking sheet. Toast them in the oven for 5 to 7 minutes, or until they are lightly golden. Chop the garlic and mix it with the cherry tomatoes in another bowl. Add the soy sauce, maple syrup, sesame oil, and Thai red curry paste. On each toasted slice of bread, spread the guacamole out evenly. Place the roasted Thai tomatoes on top of the guacamole. Put red pepper flakes and fresh cilantro leaves on top. Serve right away and enjoy!
