Ingredients: 200g soba noodles. 2 cups mixed vegetables carrots, bell peppers, cucumber, etc., thinly sliced. 1/4 cup fresh cilantro, chopped. 2 tablespoons sesame seeds, toasted. 2 tablespoons peanuts, chopped. For the dressing:. 3 tablespoons soy sauce. 2 tablespoons rice vinegar. 2 tablespoons sesame oil. 1 tablespoon honey. 1 clove garlic, minced. 1 teaspoon fresh ginger, grated. 1/2 teaspoon red pepper flakes adjust to taste.
Instructions: Follow the directions on the package to cook the soba noodles. To cool them down, drain and rinse them with cold water. Cook the soba noodles and put them in a large bowl. Add the mixed vegetables, chopped cilantro, toasted sesame seeds, and chopped peanuts. It's time to make the dressing.
