Thandai masala powder is a mix of nuts, seeds, and fragrant spices that is traditionally used to make Thandai, a drink that is meant to cool you down. With this vegan masala powder, everyone can enjoy the full flavors of Thandai without having to use any animal products.
Ingredients: 1 cup almonds. 1/4 cup cashews. 1/4 cup melon seeds. 1/4 cup poppy seeds. 1/4 cup dried rose petals. 1/4 cup fennel seeds. 1/4 cup cardamom pods. 1/4 cup black peppercorns. 1/4 cup dried ginger. 1/4 cup saffron strands. 1/4 cup cinnamon sticks. 1/4 cup cloves.
Instructions: In a dry pan, roast almonds, cashews, melon seeds, poppy seeds, dried rose petals, fennel seeds, cardamom pods, black peppercorns, dried ginger, saffron strands, cinnamon sticks, and cloves separately until fragrant. Let the roasted ingredients cool down completely. Grind all the roasted ingredients into a fine powder using a high-speed blender or a spice grinder. Store the thandai masala powder in an airtight container in a cool, dry place for up to 1 month.
