I love dancing, its so much fun, I don't even really know how to do it well, never really took classes (aside from like a year of ballet when I was ~5), but its just so much fun to wiggle around sometimes

Today on the Christmas Checklist, my mom and i decorated the house (inside) and I made hard fudge for the first time!
Things I learned:
There is a LOT of waiting, but Attentive waiting. It took over two hours I think (estimating from the playlist I had on :P) and a lot of that was standing there waiting while the temperature went up or down the required amount. I'm guessing if I do it a few more times I'll get a better idea of how long it takes and maybe be able to sit down and do something else in-between.
You really do need a deep pot--it triples or quadruples in volume while it's boiling.
For a lot of the middle stages it is Very Gluey. This appears to be normal, judging by results.
I still have no idea how soft ball stage actually works. Thank you, candy thermometer, for making sure I don't have to.
When they say to transfer it from pot to pan quick at the essential stage, they aren't kidding. 0_0
Related: when they say it will take a while to cool properly, they apparently are kidding.
So yeah... the one downside was that it hardened while I was scooping it out, and I ended up with some big lumps + the scrapings from the pot all thrown in my pan together. HOWEVER, taste and texture came out great. It's a little crumbly, a little chewy, and more crystallized than the soft kind you find more often on stores.
Hot fudge sauce may still be the Optimal Chocolate Form--it's definitely easier, in every way--but now I can add this to my arsenal of Chocolate Products I can make at home!!
