Easy Sweet and Spicy Chicken Enchiladas

Ingredients:
14 ounces of Cranberry, Apple, Orange Marmalade
12-ounce Habanero Jelly
¾ cup Sour cream
4 cups Shredded rotisserie chicken meat
2 cups Shredded Mexican cheese blend
½ cup chopped fresh cilantro
12 8-inch flour tortillas
Directions:
Preheat oven to 375ºF.
Spray a 13 x 9-inch baking dish with cooking spray. Stir together Cranberry, Apple, Orange Marmalade, Habanero Jelly, and sour cream in a large bowl. Reserve 1 cup and set aside.
Stir chicken, 1 cup cheese, and the chopped cilantro into the sauce mixture in a large bowl.
Divide the chicken mixture evenly down the center of each tortilla. Roll tortillas over filling; place seam-side down in prepared baking dish. Pour the reserved 1 cup of sauce over the enchiladas. Sprinkle with remaining cheese. Cover tightly with foil. Bake for 30 to 35 minutes or until heated through. Garnish with cilantro.
