I'll answer a bit of this with what I've got right now since it's the thing currently eating my brainpower, mostly headcanon about Yoriko's sexual tastes.

Yoriko surprises everyone by being the most enthusiastic about all of this - she's the one who started the entire foursome arrangement and is usually the one suggesting new things to try. (Second is Kaneki, who tends to read something smutty, find out if it's possible in real life, find out if it can be done relatively safely, and then suggest it. It's really helping Kaneki's social anxiety, shhh don't tell him or he'll find a way to feel weird about that, too.)

Part of Yoriko being such a driving force for the foursomes is that her response to to Takeomi, Touka and Kaneki doing something she likes is to get more provocative and eager, which once the four of them have some idea of how each other all like it, leads to the foursomes usually being a really fun upward spiral.

as someone that isn't very versed in the art of multishipping, could you maybe explain a bit how do you ship both maiko and zucest? When you write fics, how do you stop the two ships from getting in the way of each other? Parallel continuities where one is Canon and the other isn't? Polyamory? How do you personally go about it?

It depends on my mood, honestly. If I want only Maiko content, unless is explicit smut or stuff we didn't see (Zuko proposing, their wedding, pregnancies, etc) I just go for the show (or The Lost Adventures comic) since it has tons of it.

If I want only zucest, I read/write stories in which Zuko and Mai were already broken up before zucest happened, or never got together in the first place and were just friends (sometimes with Mai having had an unrequited crush on Zuko).

If I want some drama, I go for Zucest fics in which there's some level of overlap between the two relationships before the zucest endgame - provided they don't demonize Mai.

If I want both at once, considering I also like Maizula AND ship all three of these dumbasses with Ty Lee, it's time for "Oh my God, they went on a life-changing field-trip, and there was only ONE, comically large bed that can fit four dumbasses!"

Basically it always comes down to the good old brazilian wisdom of "If we organize it right, everyone gets laid"
