Pressure Cooker Borscht
Ingredients:
5 cups water
Beef bouillon for 2.5 cups of water
1# beef stew meat – cubed
2 ½ cups peeled and cubed beets
1 ½ cups chopped onion
½ cup chopped carrot
½ cup chopped celery
1 cup chopped cabbage
2 Tbsp. tomato paste
2 Tbsp. wine vinegar
1 tsp. dill weed
¼ tsp. caraway seeds
Salt and Pepper to taste
Instructions:
Brown beef in oil.
Combine in all ingredients in a pressure cooker.
For a stove top pressure cooker, cook for 10 minutes at 15# pressure.
For a digital pressure cooker, cook for 20 minutes at high pressure.
Garnish with sour cream and dill.
Serves 4 – 6
