It’s Monday and my day off. Over at #theblkprojek we have 4 day work weeks (because I’m the most kick butt boss evah!) and I use Monday’s to work on special projects, test kitchen ish, engage in radical self-care, workout or whatever my heart desires! And I don’t want to use that precious time making an involved meal. School is here and I have 5 kids attending. There is homework, forms and projects so an easy yet whole meal is a must! Tonight’s dinner is a pretty inventive #strugglemeal doubling as a one pot dish disguised as a meal in 25 minutes or less! I took leftover slowcooked chicken, white rice and mixed it with chicken broth a bit of heavy cream and threw in some frozen veggies in my favorite and most well used pot...the #dutchoven (sweartagawd I love that raggedy but resilient pot). Popped it in the oven for 20 minutes and the last five minutes I sprinkled shredded parm and smoked paprika on top...violá! Mama Tanya Cheesy Chicken and Rice Bake.
