Like most of their features, it shifts depending on their mood and desires. If they are in the form of 'Angela', then they have female genitalia. 'Ash', and they have male.
That's the basics of it, but my personal for funsies headcanon is that their preferred form is actually the hybrid one we only get to see a couple times. In that form, they have a woman's breasts and hips, but a penis. But basically yeah, they take 'I can be whatever you want' to the extreme.
