Here me out here me out, EVERYONE hates ALL the archons...
Venti!MC is hated by Mondstat (for the reasons previously stated by you and other people) and the rest of Teyvet and considered weak and useless. Monstat is also poisoned towards Venti!MC and not just Barbatos!MC by those who know their identity (but they don't reveal their identity yet)
Zhongli!MC is hated by Liyue + the rest of Teyvet because he is viewed as being too brutal, too angry, too controlling of Liyue, and when he 'dies' people CELEBRATE. The Adepti at first hated this treatment of their lord but as more and more of them fall from erosion and stuff (like the stuff that makes Xiao's friends go insane and stuff) their thoughts towards Zhonglie!MC turn sour. And when they find out he's alive... well they are NOT happy, so slowly Liyue is poisoned towards Zhongli!MC too and not just Morax!MC (they don't reveal that Zhongli!MC is Morax!MC)
Shogun!MC is hated by Inazuma + Teyvet for obvious reasons. She is viewed too brutal, too angry, too controlling, too mad (insane), too corrupt. (I'm debating if it should be Ei!MC who never makes the Shogun puppet, or if it should Shogun!MC who is also hated by Ei and Yae)
Nahida!MC is hated by Sumeru + Teyvet for reasons previously stated
Furina!MC is hated by Fontaine + Teyvet for again, reasons previously stated
Mavuika!MC is hated by Natlan + Teyvet for once more, reasons previously stated
Tsarista!MC is hated by Shehnzaya (spelling is weird) + Teyvet because of the Fatui and their actions, the fact she is a 'cold' goddess and is viewed as corrupt. The Fatui are neutral at WORST towards the Tsarista, too loving and yandere at best. But even they cannot heal their beloved Archon's frozen heart
The suitors would change obviously, slightly.
Venti!MC x (I honestly don't know but I think Boreas + Dvalin are PLATONIC)
Zhongli!MC x (I don't know but Xiao is definitely PLATONIC)
Shogun!MC/Ei!MC (whoever gets chosen) x Yae I'm thinking (or Yae + Ei if it's Shogun!MC)
Nahida!MC is PLATONIC all around
Furina!MC x Neuvillette
Mavuika!MC x Capitano (who is cold/distant/neutral slightly leaning positive, until they all fade)
Tsarista!MC x Pierro (who is very devoted to his goddess and very much wishes to be more than just a trusted advisor but she has [read: had] a lover and he does not view himself worthy of her)
These MC's are all siblings in real life and when reborn in genshin they immediately clock each other as their siblings. Zhongli/Morax!MC was so very lonely and then they found Venti!MC and he nearly sobbed in relief.
Then the archon war happened and they were reunited with Tsarista!MC!! Only Mavuika!MC + Nahida!MC + Shogun/Ei!MC + Furina!MC where left and they knew Tsarista!MC from her husband taking her with him to meetings. The Archons were all very jelly and sad when they couldn't go to the Tsarista!MC's wedding because it had already happened.
Here's what each Archon does btw
Venti!MC holds back the abyss and the eternal winter (and other things previously stated)
Zhongli!MC holds back the abyss and dead gods malevolent forces/spirits/remains/bad vibes, brings people a sense of comfort and home (and other things that I'm too lazy to think up)
Shogun/Ei!MC holds back the abyss and yokai/bad spirits/things like the Thunder Bird back and she/they also brings a sense of life and passion and loved and energy to people (and other stuff I'm too lazy to think of)
Nahida!MC holds back the abyss and desert monsters/the desert and brings/keeps life/plantlife alive along with bringing a sense of curiosity and wonderment when discovering something new (along with other things I cannot think of)
Furina!MC holds back the abyss and the Primordial Sea and brings a sense of contentment to people and brings the rivers and rain and tides (again with other things I'm far to lazy to think of)
Mavuika!MC holds back the abyss and the Night Kingdom (even fighting battles with it all on her own) and keeps the sun rising and falling and the balance between life and death balanced and brings a sense of courage and joy and spirit/passion (once more with other things I am fat too lazy to think of)
Tsarista!MC holds back the abyss and the sentinels from the Heavenly Principles (the other Archons do the same but it's mostly Tsarista!MC who does it at her insistence because they also have their own things they have to deal with) and brings the quiet moments that actually feel nice (and not suffocating) and brings love and platonic/romantic feelings (once more I'm too lazy to add/think up the other things she does/brings)
But their nations hate them (not Snezhnaya tho unless maybe???) and no matter what the Fatui does/do (they like all the Archons) they cannot help enough, cannot heal the Archon's broken souls, and what makes them the most worried/enraged/panicked and stuff, they cannon heal their own archon's broken heart.
So the archons fade and then they wake, all seven in the same room, only seven hours having gone by, waking in the room they had (in Earth's time anyway) just did a giant multiplayer session on genshin, each of them playing as an archon (except Tsarista!MC who played as a cryo character until she managed to mod the game and put in the Tsarista with her own design of her), the same archon they became.
They immediately destroyed and deleted everything related to genshin. Their parents are either dead or terrible people and the youngest among them is Nahida!MC who is too mature for her age and her time in Genshin just made it worse/made them all too mature and broken and stuff. They don't have friends either and they immediately move out of town because that town had too many bad memories (they had a lot of memories of Genshin stuff in that town).
In Genshin they had despised what they couldn't do for their siblings,despised it all so much and yet they could do nothing for fear of the Heavenly Principles, Shades, and the timeline collapsing/going off the rails.
They hated the destruction of Khaenri'ah but... but there had been invisible golden chains around them (If it's Ei!MC then she had been there with Makoto) and invisible golden threads wrapped around them, controlling every movement. When the alive Khaenrians figure this out they are... well they are quite frankly filled with sorrow and PISSED at the Heavenly Principles + Shades

As for some suggestions... I have pairing idea for Zhongli!MC? A humanish Azhdaha. Maybe due to Zhongli!MC working on a cure for Erosion, which lets say Furina!MC helped him with, and they succeeded in finding a cure!
...But did it help with the whole 'being hated'? No... no, not really...
Also, the thing with the Fatui. Honestly I kinda want the Fatui and the Harbingers having a icy relationship with the Tsaritsa!MC. She's their boss, but thats it. Nothing more.
The Khaenri'ahns in her court make this especially clear... and it wasn't uncommon for one or more to actually try and off her or worse (narrows eyes at Dottore), which she had thankfully grown used to it, so she could defend herself ).
So none of them would even bother to notice that the Ice Queen had been on the verge of breaking for a very long...
Sides that, I do like the idea of all the MCs being siblings, or maybe even adopted siblings, with Zhongli!MC and Venti!MC being the oldest, then the Tsaritsa!MC, then the Shogun!MC being found next, then Mavuika!MC, Furina!MC, and finally, little Nahida!MC...
Hm... maybe one them is even a parent? I honestly would love it if it's Zhongli!MC. Like a one night stand that left a infant on his doorstep. ...Oh god this would make things worse considering he's the oldest MC in Teyvat-
He left his baby alone for so long! (It was only 7 hours, thank god-)
Saying that, cute but sad thought, but mom-code Zhongli!MC. He was practically all his younger sibling's mom AND dad while growing up, and a even sadder HC is if he hates fighting. Which is something considering who he reincarnated as... a literal war god-
