There are three types of cheese on this Three Cheese Peach and Pancetta Pizza. The ripe peaches are sweet, the pancetta is salty, and there are three types of cheese.
Ingredients: 1 pizza dough. 1/2 cup tomato sauce. 1 cup shredded mozzarella cheese. 1/2 cup crumbled goat cheese. 1/2 cup grated Parmesan cheese. 2 ripe peaches, thinly sliced. 4-6 slices of pancetta. Fresh basil leaves for garnish. Salt and pepper to taste.
Instructions: Set your oven to 475F 245C before you start cooking. On a floured surface, roll the pizza dough into a round shape. Place the dough on a pizza stone or a baking sheet that has been lined with parchment paper. Cover the pizza dough with tomato sauce, making sure to leave a border for the crust. Add the shreds of mozzarella cheese on top of the sauce. Toss the peaches with the thin slices of fruit on top of the cheese. Even out the pancetta slices on the pizza. Grate the Parmesan cheese and crumbled goat cheese over everything. Add pepper and salt to taste. It should be baked in a hot oven for 12 to 15 minutes, or until the crust is golden and the cheese is bubbly and a little browned. Take it out of the oven and let it cool down a bit. Before serving, sprinkle with fresh basil leaves. Cut your Three Cheese Peach and Pancetta Pizza in half and eat it!
