Ingredients: 200g firm tofu, cubed. 200g rice noodles. 1 red bell pepper, sliced. 1 carrot, julienned. 1 cup broccoli florets. 1/2 cup snap peas. 2 cloves garlic, minced. 1 thumb-sized piece of ginger, grated. 2 tablespoons soy sauce. 2 tablespoons fresh lemon juice. 1 teaspoon lemon zest. 1 teaspoon dried thyme. 1 tablespoon vegetable oil. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: Cook rice noodles according to package instructions, drain, and set aside. In a large wok or skillet, heat vegetable oil over medium-high heat. Add cubed tofu and stir-fry until golden brown and crispy. Remove from the pan and set aside. In the same pan, add garlic and ginger. Stir-fry for about 30 seconds until fragrant.
