Jam-uary is when you extend the holiday indulgences a little longer.
Savor the delightful combination of sweet and tangy homemade Golden Apricot Jam with toast or pancakes, or as a garnish for sweets. The flavor of ripe apricots and a touch of vanilla are abundant in this jam.
Ingredients: 2 lbs ripe apricots, pitted and chopped. 2 cups granulated sugar. 1/4 cup fresh lemon juice. 1/2 tsp vanilla extract.
Instructions: Add the sugar and chopped apricots to a large saucepan. Give them a half hour or so to sit so the juices can come out and the sugar can dissolve. Pour the vanilla extract and freshly squeezed lemon juice into the saucepan. To keep the mixture from sticking, place the saucepan over medium heat and stir frequently as you bring it to a boil. If any foam appears on the surface, skim it off. The jam should be simmered for 20 to 25 minutes, or until it thickens to the right consistency. Stir from time to time. After taking the saucepan off the stove, give the jam some time to cool. After sterilizing the jars, pour the hot jam inside and cover them with lids. Let the jars cool until they reach room temperature. The Golden Apricot Jam should be kept cold and dark. It can last for a year or longer.
