Vegan stir-fry lovers should try the tasty and healthful Sesame Crusted Hoisin Tofu Bowls. Serve a variety of colorful vegetables with crispy tofu cubes coated in a flavorful hoisin sauce over brown rice.
Ingredients: 1 block of firm tofu, cubed. 2 tablespoons hoisin sauce. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. 2 tablespoons sesame seeds. 2 cups cooked brown rice. 2 cups broccoli florets. 1 red bell pepper, sliced. 1 carrot, julienned. 2 cloves garlic, minced. 1 tablespoon vegetable oil. Salt and pepper to taste. Green onions and sesame seeds for garnish.
Instructions: Press tofu to remove excess water and cut into cubes. In a bowl, mix hoisin sauce, soy sauce, rice vinegar, and sesame oil. Toss tofu cubes in the mixture to coat evenly. Sprinkle sesame seeds over the tofu cubes, pressing them gently to adhere. Heat vegetable oil in a pan over medium-high heat. Add tofu cubes and cook until they are golden brown and crispy, turning them occasionally. Remove from the pan and set aside. In the same pan, add minced garlic, broccoli florets, red bell pepper, and julienned carrot. Stir-fry until the vegetables are tender-crisp. Return the tofu cubes to the pan and stir-fry with the vegetables for a few minutes until everything is heated through. Season with salt and pepper to taste. Serve the sesame crusted hoisin tofu over cooked brown rice, garnished with green onions and additional sesame seeds if desired.
