A healthy and tasty quinoa sushi bowl with baked tofu, fresh vegetables, and salty nori makes a tasty and filling meal.
Ingredients: 1 cup quinoa, cooked. 200g firm tofu, cubed. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon sesame oil. 1 avocado, sliced. 1 cucumber, julienned. 1 carrot, shredded. 1 nori sheet, thinly sliced. Sesame seeds for garnish. Green onions for garnish.
Instructions: Warm the oven up to 190C 375F. To get rid of extra water, press the tofu and then cut it into cubes. Put rice vinegar, soy sauce, and sesame oil in a bowl and mix them together. Toss the tofu cubes in the sauce mixture so that they are covered evenly. Spread the tofu out on a baking sheet. Bake it for 25 to 30 minutes, or until it turns golden brown. As a base, put together quinoa in serving bowls. Add slices of avocado, cucumber, carrot, julienned cucumber, and nori on top. Put green onions and sesame seeds on top.
