These Nutella Filled Red Velvet Sandwich Cookies are a delightful treat for any occasion. The rich red velvet cookies filled with creamy Nutella make for a perfect combination of flavors. They are sure to impress your family and friends!
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 2 teaspoons vanilla extract. 2 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 tablespoon red food coloring. 1/2 cup buttermilk. 1 cup Nutella or hazelnut spread. Powdered sugar, for dusting.
Instructions: Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. All-purpose flour, cocoa powder, baking powder, baking soda, and salt should all be mixed together in a different bowl using a whisk. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Add the red food coloring and mix it in until the dough is a uniform color. Put the dough in the fridge for at least an hour with the lid on. Warm your oven up to 350F 175C and put parchment paper on a baking sheet. Press down on a tablespoon of dough in your hand to make it flat. Put about a teaspoon of Nutella in the middle of the dough, and then fold it around it to make a ball. Do it again with the rest of the dough and Nutella. Don't crowd the cookie balls on the baking sheet; leave some space between each one. Put it in the oven for 10 to 12 minutes, or until the edges are set and the middle is still a little soft. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. After the cookies have cooled, sprinkle them with powdered sugar.
