A tasty white wine tomato basil sauce makes this pan-seared cod dish even better. It's easy to make and tastes great, so it's great for a weeknight dinner or a special event.
Ingredients: 4 cod fillets. Salt and pepper to taste. 2 tablespoons olive oil. 3 cloves garlic, minced. 1/2 cup white wine. 1 can 14 oz diced tomatoes. 1/4 cup chopped fresh basil. 1 tablespoon butter.
Instructions: Season cod fillets with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and cook for 1 minute until fragrant. Place cod fillets in the skillet and cook for 3-4 minutes per side until golden brown and cooked through. Remove cod fillets from the skillet and set aside. Deglaze the skillet with white wine, scraping up any browned bits from the bottom. Stir in diced tomatoes and chopped basil, simmer for 5 minutes. Add butter to the sauce and stir until melted and well combined. Return the cod fillets to the skillet and spoon the sauce over them. Cook for an additional 2-3 minutes until the cod is heated through and the sauce has thickened slightly. Serve hot, garnished with additional fresh basil if desired.
