Ingredients: 1 lb flank steak. 1/4 cup fresh orange juice. 1/4 cup fresh lime juice. 2 cloves garlic, minced. 1 tsp ground cumin. 1 tsp chili powder. 1/2 tsp salt. 1/4 tsp black pepper. 1 tbsp olive oil. 1 red bell pepper, thinly sliced. 1 green bell pepper, thinly sliced. 1 yellow onion, thinly sliced. 8 small corn tortillas. Optional toppings: avocado slices, chopped cilantro, lime wedges.
Instructions: Mix orange juice, lime juice, garlic, cumin, chili powder, salt, and pepper in a bowl with a whisk. Place flank steak in a small dish and cover it with marinade. Put it in the fridge for at least 30 minutes or up to 4 hours with the lid on. Warm up the olive oil in a big pan over medium-high heat. Add the onion and sliced bell peppers. Cook for about 5 to 7 minutes, until the vegetables are soft. Take it out of the pan and set it aside. Add the flank steak that has been marinated to the same pan. Cook for 34 minutes on each side for medium-rare, or longer if you like it more done. Take it off the heat and let it rest for a few minutes. Then, cut it against the grain into thin slices. Warm up the corn tortillas in the oven or a skillet while the steak rests. Put sliced steak, sauted peppers and onions, and a taco shell on a warm tortilla. You can add toppings if you want to. Serve right away and enjoy!
