These Pesto Tortellini Kabobs are a delicious and easy way to enjoy the flavors of pesto and cheesy tortellini on a skewer. They make a great appetizer or a main course for your next BBQ or picnic.
Ingredients: 1 package of cheese tortellini. 1/2 cup of pesto sauce. 1 cup of cherry tomatoes. 1 cup of fresh mozzarella balls. 1/2 cup of black olives. 1/2 cup of red bell pepper chunks. 1/2 cup of red onion chunks. Wooden skewers soaked in water.
Instructions: Cook the cheese tortellini according to package instructions. Drain and let it cool. In a bowl, mix the cooked tortellini with the pesto sauce until well coated. Thread the tortellini, cherry tomatoes, fresh mozzarella balls, black olives, red bell pepper chunks, and red onion chunks onto the wooden skewers, alternating the ingredients as desired. Repeat until all the skewers are assembled. Preheat your grill to medium-high heat or use a grill pan on the stove. Grill the kabobs for about 3-4 minutes per side, or until they have nice grill marks and the ingredients are heated through. Serve the Pesto Tortellini Kabobs hot, garnished with additional pesto sauce if desired.
