Delicious BBQ brisket burnt ends, caramelized to perfection with a sweet and savory glaze, and a hint of smoky flavor.
Ingredients: 8 lbs beef brisket point. 1/4 cup olive oil. 1/4 cup Worcestershire sauce. 1/4 cup yellow mustard. 1/4 cup beef rub. 1/4 cup brown sugar. 1/4 cup honey. 1 stick unsalted butter, cubed.
Instructions: Set the smoker's temperature to 250F 121C. Remove any extra fat from the brisket point, preserving a quarter-inch layer. Apply olive oil, Worcestershire sauce, and yellow mustard to the brisket. Evenly rub the brisket with beef rub. Brisket should be smoked for four to six hours, or until the internal temperature reaches 160F 71C. Cut the smoked brisket into small pieces by cubing it. To make a glaze, combine honey and brown sugar in a bowl. Coat the brisket cubes by tossing them in the glaze. Top the glazed brisket cubes with butter cubes. To make the glazed cubes caramelized and tender, return them to the smoker and smoke for a further two to three hours. Enjoy while hot!
