These shrimp avocado tostada rolls are a fun take on traditional sushi. They have the tastes of sushi and the crunch of tostadas, making a delicious and unique dish.
Ingredients: 4 nori seaweed sheets. 2 cups sushi rice, cooked and seasoned. 1 avocado, sliced. 8 cooked shrimp, peeled and deveined. 1/4 cup mayonnaise. 2 tablespoons sriracha sauce. 1 tablespoon sesame seeds. 2 green onions, thinly sliced. Soy sauce, for serving.
Instructions: Lay a nori sheet on a bamboo sushi mat. Spread a layer of seasoned sushi rice evenly over the nori, leaving about 1 inch of space at the top. Arrange avocado slices and shrimp along the center of the rice. In a small bowl, mix together mayonnaise and sriracha sauce. Drizzle the spicy mayo over the avocado and shrimp. Sprinkle sesame seeds and green onions over the filling. Roll the sushi tightly using the bamboo mat, applying gentle pressure as you roll. Slice the sushi roll into 6-8 pieces using a sharp knife. Repeat with the remaining ingredients to make more rolls. Serve the shrimp avocado tostada sushi with soy sauce for dipping.
