Tostones
Ok... It's time to talk about my favorite side dish on the planet. TOSTONES. All the Cubans in the house say... QUE... *sigh*... anyway... A toston is a giant plantain chip. I think that's the best way to describe it.
Ingredients
Green plantains (you can use as many as you want; minimum 2)
Canola oil
Equipment
Tostonera or any flattening device.
Instructions
Peel plantains and slice into pieces about 2 inches long.
Pour oil to a depth of 2 or 3 inches in a deep fat fryer or heavy skillet.
Fry plantains on high until soft and pat dry with a paper towel.
Take each piece and smash in a tostonera.
Place flattened plantains back in the oil and fry for 2 minutes on each side.
Remove and pat dry with paper towel.
Season with salt and garlic powder or use mojo.
