Judhe # #PeterKuruvita discusses high tea. We are getting ready to start the 3rd and final day of judging. The Revolution is on!
Selvana Chelvanaigum & Ian Jones started the day by taking our judges on an Australian Journey. With Australian wild flowers and plants as deco they brought Australia right to the high tea table. They maintained sustainability right throughout with wood chips salvaged out of a wood yard for food presentation and table decoration. The honey they used in their food preparations is Backyard honey, a honey that is collected by suburban residents in their backyards. Their Anzac, a tribute to fallen soldiers of the First World War paired with the Dilmah Nuwara Eliya Afternoon Tea was a remarkable creation that showcased respect, thoughtfulness and patriotism as well as a perfect understanding of tea.

MGM MACAU showcased teamwork and innovation with their perfectly synchronized performance and perfect showmanship. With a relaxed ambiance created with the soothing traditional music, not only did they put on a great show but they also showcased their skill in the perfect combinations of flavours, textures and tea at the heart of it all. The Sri Lankan Waters Edge Limited team presented an intriguing take on Afternoon #Tea with a ‘Fifty Shades of Tea’ theme. Hot mocktail ‘The Forbidden Flirt’ was a combination of #Dilmah Moroccan Mint Green Tea accompanied by the Pistachio Financier Gateaux. The cocktail ‘The Lingering Embrace’, a sensual combination of Dilmah Springtime Oolong with Ginger Tea and Hennessy XO & Cointreau left lingering impressions on our judges. 21st Century Afternoon tea is all about bringing in your culture to the high tea table and our Indonesian Global Finalists Shangri-La Surabaya awed the judges with a vibrant representation of Indonesian heritage on their high tea table. The table decorations featured a Balinese theme tinged with gold while the typical Indonesian flavours of chili, lemongrass and ginger and the amazing grace with which these powerful flavours were balanced in perfect harmony with the tea was quite remarkable. The Revolution continues!
