These Vegan Mushroom Walnut Bean Burgers are packed with flavor and protein. The combination of mushrooms, walnuts, and black beans creates a hearty and satisfying burger patty that even meat-eaters will love. Perfect for a quick and easy weeknight dinner or a weekend barbecue.
Ingredients: 1 cup walnuts, chopped. 1 cup mushrooms, finely chopped. 1 can 15 oz black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup onion, finely chopped. 2 cloves garlic, minced. 2 tablespoons flaxseed meal + 5 tablespoons water for flax eggs. 2 tablespoons soy sauce. 1 tablespoon olive oil. 1 teaspoon smoked paprika. 1/2 teaspoon cumin. Salt and pepper to taste. Burger buns and toppings of choice.
Instructions: Warm the oven up to 190C 375F. Flaxseed meal and water should be mixed together in a small bowl. Do nothing for 5 minutes so it can get thicker. Put olive oil in a pan and heat it over medium-low heat. Put in the garlic and onions, and cook for about 3 to 4 minutes, until the onions are soft. It will take about 5 minutes of cooking after adding the chopped mushrooms to the pan for them to lose their water and turn brown. To make black beans chunky, pulse them in a food processor. Move to a big bowl for mixing. Put the mushrooms, onions, and garlic that you cooked in a pan and add them to the bowl with the black beans. Flax eggs, soy sauce, smoked paprika, cumin, salt, and pepper should all be mixed in. Mix everything together well. Put the burger patties on a baking sheet that has been lined with foil. The patties should be firm and golden brown after 20 to 25 minutes of baking in a hot oven. They should be turned over halfway through the baking time. Put the burgers on buns and top them with the things you like. Have fun!
