Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup olive oil. 3 tablespoons soy sauce. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon paprika. 1/2 teaspoon chili powder. Salt and black pepper to taste. Tropical Salsa:. 1 cup diced pineapple. 1 cup diced mango. 1/2 cup diced red onion. 1/4 cup chopped cilantro. Juice of 1 lime. Salt to taste.
Instructions: Add honey, minced garlic, cumin, paprika, chili powder, salt, and black pepper to a bowl and mix them together using a whisk. This will make the marinade. Put the chicken breasts in a shallow dish or a plastic bag that can be closed again, and pour the marinade over them. Put the dish or bag in the fridge for at least 30 minutes, or better yet, overnight, for better flavor. Warm up the grill over medium-high heat. Take the chicken out of the marinade and let the extra drip off. Grill the chicken for 6 to 8 minutes on each side, or until it's done and has grill marks on it. In a bowl, mix diced pineapple, mango, red onion, cilantro, lime juice, and salt. While the chicken is cooking on the grill, make the Tropical Salsa. Combine well. Take the chicken off the grill when it's done and let it rest for a few minutes. Put a lot of tropical salsa on top of the grilled chicken that has been marinated. Grilled marinated chicken with tropical salsa is a great meal.
