Fresh Trout Dip
Not only is this Fresh Trout Dip quick and simple, and only requires a handful of ingredients, not to overshadow the fresh fish; it is also elegant and makes a beautiful appetizer or entréé if you’re entertaining.
Ingredients (makes about 2 cups):
1 (0.75-pound) fresh rainbow trout
2 scallions, finely chopped
4.5 ounces lowfat plain yogurt
1 tablespoon chopped fresh chives
fleur de sel and freshly ground pepper, to taste
Steam rainbow trout until cooked through.
Remove trout from steamer basket. Peel off the skin and place trout fillets in a medium bowl. Mash with a fork, and stir in scallions and chives, reserving a bit for garnish. Stir in yogurt, season with fleur de sel and pepper, and mix, until well-blended.
Spoon Fresh Trout Dip into serving bowl, and garnish with remaining scallion and chives. Chill in the refrigerator, at least an hour before serving with romaine lettuce and endive leaves.
