Teriyaki Salmon Avocado Rice Stack
Salmon recipe I guess
Ingredients:
1 skin-on salmon filet, 1-2 pounds
Chili flakes, to taste
1 tbsp ground cayenne
2 tbsp paprika
Salt and black pepper, to taste
1/2 red onion
6 cloves garlic
3 tbsp olive oil
Supplies:
Sheet of aluminium foil
Knife
Paper towel (optional)
Recipe:
Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius)
Pat dry the filet and then slice into 3-5, 2-3 inch wide slices (widthwise, not lengthwise).
Place filet slices skin side down inside tinfoil sheet. Curl up edges slightly.
Rub olive oil onto and into salmon.
Sprinkle on paprika, cayenne, and chili flakes. Apply salt and pepper.
Dice half onion and mince garlic. Spread across filet.
Fold the aluminium foil sheet around the salmon. Take two edges, fold them together, and roll, making a packet. Be careful not to rip the foil.
Put into the oven for 20-30 minutes. Avoid opening the packet to check, as that releases the steam that cooks it (a good rule of thumb is to wait until you can smell it, then wait 5-7 minutes more. It's not the end of the world if you take it out undercooked, you can just cook it a little more).
Serve with rice (I like wild rice. You can have it plain, or with soy sauce) and salad on the side.
BONUS RECIPE: THE SALAD I USUALLY EAT ALONGSIDE THIS DISH.
Place a large amount of baby spinach leaves in a large bowl (I usually just buy a large container from the store and dump that in).
Slice up the remaining red onion.
Slice up 1/2 cucumber.
Slice up 1 red bell pepper.
Add Mediterranean or Vinaigrette dressing, salt, and pepper.
Mix and serve.
coconut and coriander chutney
This chutney is good on an astral plan, in my humble opinion.
You can do anything you like with it once it's prepared, but i'm posting today because I like it best like this : three spoonfuls of it over a bit of white fish of your choice in a wrap of parchment paper, into the oven at 200°c for 10-20 mn. I'll always make this for my birthday.
You can serve this with rice.
200 g freshly grated or dried coconut
200 ml coconut milk
a big bunch of coriander, chopped
one or two chili peppers (spicy to your taste)
a chunk of ginger, grated (like a thumb)
3 crushed garlic cloves
juice from 4 small limes
a handful of chopped fresh mint leaves (or dry if you don't have them)
a spoonful of vinegar (optionnal)
two to three spoonfuls of sugar
salt to taste
Just give this a good mix. Thank me later if you please.
As for Arda, i could picture this being eaten by the Teleri.
They live by the sea and love nothing more than seafood.
To prevent it from getting too repetitive they would sometimes eat plain fish, cooked to perfection, to savor the taste, but sometimes do this recipe as a palate cleaser, for feasts and / or cold days, before falling back into more simple habits in day-to-day life.

Fish Tacos with Mango Slaw
Recipe:
2 Lb Cod Fish
Seasoning:
1 tbsp smoked paprika 2 tsp salt 1 tsp onion powder 1 tsp garlic powder 1 tsp cayenne powder 1/2 tsp black pepper 1/2 tsp dried oregano 1/2 tsp dried thyme 1/2 lime, juiced 1/2 small orange, juiced 4 tbsp olive oil
Add all seasonings to a small bowl and mix. Pour over cod and marinate for 30 minutes.
Pan sear option: In a pan over medium-high heat, add 1 tbsp olive oil and sear cod in batches for 4 minutes on each side.
Oven option: Preheat oven to 400°F and bake cod for 10 minutes.
Mango Salsa:
1 mango, cubed 1/2 red onion, diced 1/2 red bell pepper, chopped 1/4 cup pickled jalapeño, chopped 4 tbsp cilantro, chopped 1/2 lime, juiced salt to taste 3 cups shredded red cabbage
Add all ingredients to a bowl and mix until combined.
Sauce:
1/4 cup picked jalapeño 1/4 cup cilantro 1/2 cup mayo 1/2 cup sour cream 1/2 tsp paprika 2 garlic cloves 1/2 tsp onion Powder 1/2 tsp ground cumin 1/2 lime, juiced
Add all ingredients to a food processor or blender and blend until smooth.
when life gives you lemons, take
750g elbow pasta
one red onion
2 dl cream
1 tin of smoked Baltic Sprat (Riga Gold for example)
salt and pepper to taste
cook the pasta, chop the onion, mix everything in a big bowl, strain the lemon on top
