This gluten-free recipe calls for baking trout, which is then served with a zesty herb salsa and fresh lemon slices. This dish is great for a healthy dinner because it is light and cool.
Ingredients: 2 whole trout, cleaned and gutted. 2 tablespoons olive oil. Salt and pepper to taste. 1 lemon, thinly sliced. 1/4 cup fresh parsley, finely chopped. 1/4 cup fresh cilantro, finely chopped. 2 cloves garlic, minced. 2 tablespoons capers, chopped. 2 tablespoons red onion, finely chopped. 2 tablespoons olive oil. 1 tablespoon lemon juice. Salt and pepper to taste.
Instructions: Turn on the oven and heat it up to 400F 200C. Add salt and pepper to the trout after rubbing it with olive oil all over. Put lemon slices inside the body of each trout. Put the trout on a baking sheet that has parchment paper on it. To make the flesh opaque and easy to flake with a fork, bake for 15 to 20 minutes. Make the herb salsa while the trout is cooking. In a bowl, mix the parsley, cilantro, garlic, capers, red onion, olive oil, lemon juice, salt, and pepper. Take the trout out of the oven when it's done and let it rest for a few minutes. If you want, you can serve the trout with herb salsa and extra lemon slices on top.
