Ingredients: 1 lb macaroni pasta. 4 tbsp unsalted butter. 1/4 cup all-purpose flour. 3 cups whole milk. 2 cups shredded cheddar cheese. 1 cup shredded gruyere cheese. 1/2 cup grated parmesan cheese. Salt and pepper to taste. 1 tsp truffle oil. 1/4 cup breadcrumbs. Fresh parsley for garnish.
Instructions: Warm the oven up to 190C 375F. Follow the directions on the box to cook the macaroni until it is al dente. Remove the water and set it aside. Melt the butter over medium-low heat in a large saucepan. Add the flour and stir it in. Cook for one to two minutes, until it turns golden brown. Gradually whisk in the milk while stirring all the time until the mixture is smooth and thick. Turn down the heat and stir in the cheddar, gruyere, and parmesan cheeses until they melt and become creamy. Add salt, pepper, and truffle oil to taste to season. Mix the cooked macaroni into the cheese sauce by stirring it in well. Put the mac and cheese mix in a baking dish that has been greased. Cover the whole thing with breadcrumbs. Put it in an oven that is already hot and bake for 20 to 25 minutes, or until the top is golden and bubbly. Before serving, sprinkle with fresh parsley.
