This week I'm talking about fats. Fats are solid at room temperature like lard. The fat in the body is about 3500 calories per pound. 95% of the fat we eat and store is made of TRIGLYCERIDES (3 fatty acids on a carbon backbone called glycerol). Oils are fats and are liquid at room temperature, they usually have about 135 calories per teaspoon. They tend to be hidden in processed foods, dressings etc Balanced nutrition involves reducing these hidden fats and using more natural fats like like fish and nuts. Studies have shown that by reducing these hidden fats the number of calories per bite of food we eat in a day goes down and that's without making any other changes to our diets. During the 80's the science industry led the food industry to promote low fat foods. The problem was, they tended to add more sugar to make up fr the fat loss. There was one famous example of a cookie that had the same calories in the full fat version as the low fat version due to the sugar that was added. We became so focused on the sugar content that the fat began to creep back. Lately the Mediterranean diet which promotes about 30% healthy fats has been on the rise.
