For #tttt_emotions I want to shine a light on our 68% Dark and 60% Dark Milk Marañón, Peru. Unfortunately I missed out on #tttt_mylk last week, but hopefully I can make up for it with this post. All of our Marañón chocolate bars we hold especially dear because they were the first beans we bought from actual source. In those days it was much harder to find cacao and these beans were especially good. It took us a lot of headaches to figure out the right roast with a notoriously temperamental cacao and at times it drove us nuts not being able to get consistent results. We came close to throwing in the towel. When we finally did manage a good and stable end result we posted the bars to Dan Pearson of @maranonchocolate and he was just so lovely about our chocolate, it filled us with pride and confidence and new hope to carry on on this road.
