These Cilantro Jalapeno Tuna Cakes are a delicious twist on traditional tuna cakes. The combination of fresh cilantro, spicy jalapeno, and zesty lime juice adds a burst of flavor to the tender tuna. Perfect as an appetizer or light meal.
Ingredients: 2 cans tuna, drained. 1/4 cup breadcrumbs. 1/4 cup chopped cilantro. 1 jalapeno, seeded and finely chopped. 1 egg. 2 tablespoons mayonnaise. 1 tablespoon lime juice. 1/2 teaspoon garlic powder. Salt and pepper to taste. 2 tablespoons olive oil for frying.
Instructions: Mix tuna, breadcrumbs, cilantro, jalapeo, egg, mayonnaise, lime juice, garlic powder, salt, and pepper in a bowl. Mix everything together well until it's all mixed in evenly. Make small patties out of the mixture that are about 2 inches across. Set a pan on medium heat and add the olive oil. Each side should take about three to four minutes to cook until the cakes are golden brown and crispy. Take it out of the pan and put it on a plate lined with paper towels to drain the extra oil. As a side dish, serve it hot with your favorite sauce or salad.
