A hearty and flavorful hash made with ground turkey and fresh vegetables, seasoned with paprika and thyme. Perfect for a satisfying Paleo-friendly meal.
Ingredients: 1 lb ground turkey. 2 sweet potatoes, diced. 1 onion, diced. 2 garlic cloves, minced. 1 bell pepper, diced. 2 tbsp olive oil or coconut oil. 1 tsp paprika. 1/2 tsp dried thyme. Salt and pepper, to taste. Fresh parsley, for garnish.
Instructions: In a large skillet, heat olive oil or coconut oil over medium heat. Add diced sweet potatoes and cook until they begin to soften, about 5 minutes. Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook until onion is translucent and bell pepper is tender. Push the vegetables to one side of the skillet and add ground turkey to the other side. Break up the turkey with a spatula and cook until browned. Once the turkey is cooked through, mix it with the vegetables in the skillet. Season the mixture with paprika, dried thyme, salt, and pepper. Stir well to combine. Continue cooking for another 5-7 minutes, or until sweet potatoes are cooked through and everything is heated. Garnish with fresh parsley before serving.
