A wholesome Whole30-compliant tortilla soup using leftover turkey, packed with flavor and nutrients. Perfect for a quick and satisfying meal.
Ingredients: 2 cups shredded leftover turkey. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 zucchini, diced. 1 can diced tomatoes. 4 cups chicken broth. 1 teaspoon cumin. 1 teaspoon chili powder. 1 teaspoon dried oregano. Salt and pepper to taste. Fresh cilantro, chopped, for garnish. Avocado slices, for topping. Lime wedges, for serving.
Instructions: In a large pot, saut diced onion and minced garlic until fragrant. Add chopped bell pepper and zucchini, cook until vegetables soften. Stir in shredded leftover turkey, diced tomatoes, and chicken broth. Season the soup with cumin, chili powder, dried oregano, salt, and pepper. Simmer on low heat for 20-25 minutes to allow flavors to meld. Serve the soup hot, garnished with fresh cilantro, avocado slices, and lime wedges.

Ingredients: 2 cups cooked turkey, shredded. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1 can 10 ounces enchilada sauce. 8 small corn tortillas. 1/2 cup diced onion. 1/2 cup diced bell pepper. 1 teaspoon chili powder. 1/2 teaspoon cumin. 1/2 teaspoon garlic powder. Salt and pepper to taste. Cilantro for garnish optional.
Instructions: Preheat the oven to 375F 190C. In a large mixing bowl, combine shredded turkey, diced onion, diced bell pepper, chili powder, cumin, garlic powder, salt, and pepper. Mix well. Pour about 1/4 cup of enchilada sauce into the bottom of a baking dish and spread it evenly. Place a tortilla on a flat surface and spoon some of the turkey mixture onto the center of the tortilla. Roll it up and place it seam side down in the baking dish. Repeat with the remaining tortillas and turkey mixture. Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the shredded cheddar and Monterey Jack cheese over the top. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Garnish with chopped cilantro if desired before serving.
