Ingredients: For the Shortbread Base:. 1 cup almond flour. 2 tbsp coconut flour. 2 tbsp powdered erythritol or sweetener of choice. 3 tbsp coconut oil, melted. For the Caramel Layer:. 1/2 cup almond butter. 1/4 cup coconut oil. 1/4 cup powdered erythritol or sweetener of choice. 1 tsp vanilla extract. For the Chocolate Coating:. 1/2 cup sugar-free dark chocolate chips. 1 tbsp coconut oil.
Instructions: Preheat your oven to 350F 175C and line a baking dish with parchment paper. In a mixing bowl, combine almond flour, coconut flour, powdered sweetener, and melted coconut oil. Mix until a dough forms. Press the dough evenly into the bottom of the prepared baking dish. Bake for 10-12 minutes or until lightly golden. Remove from the oven and let it cool completely. While the shortbread base is cooling, prepare the caramel layer. In a saucepan over low heat, melt together almond butter, coconut oil, powdered sweetener, and vanilla extract. Stir until smooth and well combined. Pour the caramel mixture over the cooled shortbread base, spreading it out evenly. Place in the freezer for about 30 minutes to set. Once the caramel layer is set, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Pour the melted chocolate over the caramel layer, spreading it out evenly to cover. Return to the freezer for another 30 minutes or until the chocolate is set.
