Uhhhh... Ube pie anyone?
Guess who’s having a Hollow Purple(sweet potato-Ube) pie this holiday?
But fr I can’t believe I actually went and made it! I haven’t baked a new dish in years!

Ube Biscoff Cheesecake

Crust
1 package (250 g) Biscoff biscuits, crushed 1/4 cup melted vegan butter 1 tbsp coconut nectar (or maple syrup)
Preheat oven to 325 degrees F. Grease a springform pan with coconut oil.
In a mixing bowl, stir together the crushed biscuits, melted vegan butter and coconut nectar. Transfer to prepared pan. Spread out evenly and press down firmly.
Bake in preheated oven for 10 minutes. Allow to cool completely.
Filling
2 cups cashews the cream from one can of full-fat coconut milk 1 cup ube halaya (homemade or store-bought) ½ cup coconut oil, melted
The juice of one lemon 1 tbsp ube extract
1/4 tsp nutmeg 1/4 tsp sea salt 2 tbsp Biscoff cookie crumbs In a high-speed blender, place the; cashews, coconut cream, ube halaya, melted coconut oil, lemon juice, ube extract, nutmeg, and sea salt. Blend until smooth and creamy, scraping down sides occasionally. Pour filling over top of cooled crust. Sprinkle the crushed cookie crumbs evenly over top of filling. Set cake in freezer overnight to set. Transfer to fridge in the morning. Store leftovers in fridge or freezer.
Ube Custard Pie
I did not get a pic of the vegan ube pie I made before the masses devoured it. I do still have filling so I'm thinking of making bars next!
My birthday cake was a bubble tea pie.
