Well, vegan...umm, I'm afraid being vegan is not quite popular or common option in Japan so far. Lots of websites come up when I google vegan in our language(it is ビーガン(bee-gun)), but I don't think the word itself is not very widely known among people.
In Japan, there is a traditional meal called "Shojin ryori", which Buddhist monks eat. It's quite close to vegan, but it's considered to be very special meal for ordinary people.(expensive, and hard to find)
I often read about substitution food(I don't know what they really are) in foreign cooking recipes for vegans, but those stuff is not sold at the supermarket in Japan. (I think some of them are available on internet though)
When traveling foreign countries, I find many food items and ready-made meals have "vegetarian" version,, such as normal curry and vegetarian curry or normal pizza and vegetarian pizza...they often have choice to become instant vegetarian. But in Japan, such option is quite rare or almost impossible to find "vegetarian" sign at stores or restaurants - so let alone vegan meals.
I think, at least either bonito flavor or beef flavor is contained in most of the meals for hidden seasonings. :/
