This dish gives complete nutrition from potatoes, eggs, and fresh veggies to power you throughout the day. Here are the ingredients and the procedures you need to prepare this yummy breakfast treat.
First, heat a well seasoned cast-iron or non-stick skillet over medium to medium-high heat. Add the shredded potatoes, onions, and bell pepper then allow them to cook, flipping occasionally. After several minutes, add the mushrooms and continue to cook. Once your desired crispiness is achieved, transfer them to a bowl. Keep the same skillet heated to soft-fry the egg. Crack the egg into the center of the skillet and allow to cook until the white is cooked but the yolk is not completely set. Then transfer the cooked egg onto the hash brown mixture. Top it with the black beans, pico de gallo or salsa, and sliced or diced avocado and garnish with fresh cilantro. The entire dish is only 476 calories but packs a lot of energy.
I love sushi and I love potatoes, so the Fried Potato Sushi roll lets me enjoy both at the same time! It takes a bit longer to prepare this but I’m sure the family will be quite surprised when I bring this out.
Prepare mashed potatoes according to the instructions on the package then season with salt and pepper to taste and let cool. Spread the seaweed and distribute mashed potatoes on them. Place surimi bars in the center and roll up and dip into the slightly whisked egg. Coat the rolls with breadcrumbs then fry them one at a time at a high temperature for 3 minutes until golden brown. Cut the rolls into 8 pieces and serve. You can also decorate the sushi rolls with dressing by blending 1 cup mayonnaise, 2 chipotle chilis in adobo, 2 teaspoons lime juice, plus salt and pepper.
Here’s one of my favorite recipes at Potato Goodness, the Potato Okonomiyaki which is a savory Japanese pancake filled with cabbage and pickled ginger and topped with potato slices that are crispy on the outside and creamy on the inside. This is a perfect weeknight meal for the whole family!
First whisk the flour, salt, baking powder and dashi granules in a large bowl. Lightly beat the eggs and water together and add them to the dry ingredients. Use a spatula or wooden spoon to mix everything together. Add the cabbage and pickled ginger to the batter and mix well then set it aside. In a medium nonstick skillet, heat the sesame oil over medium heat. Add some of the potato slices, only enough to fit in an even layer. Don’t crowd the slices or they will not brown. Sprinkle the potatoes with a tiny bit of salt and cook for 3-5 minutes on each side or until they are golden brown. Remove the slices from the skillet and place on a paper towel lined plate. Set aside. Repeat with the remaining slices.
Reheat the same skillet over a medium high flame. Add a touch of sesame oil if there isn’t any left in the pan from the potatoes. Scoop 1/4 of the batter into the skillet and top with 3 or 4 potato sliced. They can overlap slightly. Cook the pancake on the first side for 3-5 minutes or until golden brown. Carefully flip the pancake so the potatoes are on the bottom and cook for another 3 minutes. Transfer to a plate and repeat with the remaining batter. Serve the pancakes with the toppings immediately.
