Delicious homemade ice cream sandwiches made with chocolate chip cookies and creamy vanilla ice cream. Perfect for a sweet treat!
Ingredients: 1 pint vanilla ice cream. 1 cup chocolate chips. 1/2 cup unsalted butter, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 egg. 1 teaspoon vanilla extract. 1 cup all-purpose flour. 1/2 cup cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt.
Instructions: Warm the oven up to 175F 350C. Cream together softened butter, brown sugar, and white sugar in a medium bowl. Put in the egg and vanilla extract, and mix it in well. Put flour, cocoa powder, baking soda, and salt in a different bowl and sift them together. Slowly add the dry ingredients to the wet mixture and mix them in until they are all mixed in. Add the chocolate chips and mix them in. Drop tablespoon-sized pieces of dough, spaced out, on a baking sheet lined with parchment paper. Put the cookies in the oven for 10 to 12 minutes, or until they are set. Let cookies cool all the way down. The ice cream should be put between two cookies, and it should be pressed together gently to make a sandwich. Do it again with the rest of the ice cream and cookies. Before you serve, put the sandwiches in the freezer for at least an hour to get firm.
