This was a perfect dish to wrap up 2016; 1. Desserts, baking and chocolate pretty much sum up my world 2. I got to mess up the kitchen with my cutest and favorite cousins.
For the batter I actually ended up using baking soda instead of baking powder but it didn’t make much of a difference. I’ll probably use a little less sugar next time though, especially if I want to frost them with buttercream because that ends up adding quite a bit of sugar on it’s own.

This homemade ice cream cake combines layers of creamy vanilla and chocolate ice cream with a crunchy chocolate cookie crust, decadent hot fudge sauce, and whipped cream for a delightful frozen treat that will surely impress your guests.
Ingredients: 2 pints vanilla ice cream. 1 pint chocolate ice cream. 1 package chocolate sandwich cookies. 1/2 cup melted butter. 1 cup hot fudge sauce. 1 cup whipped cream. Chocolate syrup for garnish. Maraschino cherries for garnish.
Instructions: Allow vanilla and chocolate ice cream to soften slightly at room temperature. Crush chocolate sandwich cookies into fine crumbs. Mix cookie crumbs with melted butter to create a crust. Press crust into the bottom of a springform pan and freeze until firm. Spread softened vanilla ice cream over the crust and freeze until set. Warm hot fudge sauce and pour over the vanilla ice cream layer. Spread softened chocolate ice cream over the fudge layer and freeze until set. Top with whipped cream, chocolate syrup, and maraschino cherries. Freeze until firm, preferably overnight. Slice and serve chilled.

This Vegan Vanilla Chocolate Chip Cake is a delightful treat that combines the flavors of vanilla and chocolate in a moist and fluffy cake. It's perfect for any occasion, from birthdays to gatherings with friends. Plus, it's easy to make and requires simple, plant-based ingredients.
Ingredients: 1 1/2 cups all-purpose flour. 1 cup organic cane sugar. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup unsweetened almond milk. 1/3 cup organic applesauce. 1/4 cup melted coconut oil. 2 tablespoons apple cider vinegar. 2 teaspoons vanilla extract. 1/2 cup vegan chocolate chips.
Instructions: Preheat oven to 350F 175C. In a large mixing bowl, combine flour, sugar, baking soda, and salt. Add almond milk, applesauce, coconut oil, apple cider vinegar, and vanilla extract. Mix until well combined. Fold in vegan chocolate chips. Pour batter into a greased 8-inch cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before slicing and serving.
