Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1/2 cup unsalted butter, cold and cubed. 1/4 teaspoon salt. 2 ripe bananas, mashed. 1/2 cup vanilla pudding. 1/2 cup whipped cream. 1/4 cup crushed vanilla wafers. 1 banana, sliced for garnish.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a food processor, combine the all-purpose flour, granulated sugar, unsalted butter, and salt. Pulse until the mixture resembles coarse crumbs. Press about 2 tablespoons of the cookie dough mixture into the bottom of each cupcake liner to form the crust. Bake the crusts in the preheated oven for 10-12 minutes or until they turn golden brown. Let them cool completely in the muffin tin. In a mixing bowl, combine the mashed bananas and vanilla pudding until well mixed. Spoon the banana pudding mixture into each cooled cookie cup crust. Top each cup with a dollop of whipped cream. Sprinkle crushed vanilla wafers over the whipped cream. Garnish each cup with a slice of banana. Chill in the refrigerator for at least 30 minutes before serving.
