Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1/2 cup unsalted butter, cold and cubed. 1/4 teaspoon salt. 2 ripe bananas, mashed. 1/2 cup vanilla pudding. 1/2 cup whipped cream. 1/4 cup crushed vanilla wafers. 1 banana, sliced for garnish.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a food processor, combine the all-purpose flour, granulated sugar, unsalted butter, and salt. Pulse until the mixture resembles coarse crumbs. Press about 2 tablespoons of the cookie dough mixture into the bottom of each cupcake liner to form the crust. Bake the crusts in the preheated oven for 10-12 minutes or until they turn golden brown. Let them cool completely in the muffin tin. In a mixing bowl, combine the mashed bananas and vanilla pudding until well mixed. Spoon the banana pudding mixture into each cooled cookie cup crust. Top each cup with a dollop of whipped cream. Sprinkle crushed vanilla wafers over the whipped cream. Garnish each cup with a slice of banana. Chill in the refrigerator for at least 30 minutes before serving. Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1/2 cup milk. 1 egg. 1 1/2 tsp baking powder. 1/2 tsp vanilla extract. 1/4 tsp salt. For the Crumb Topping:. 1/4 cup granulated sugar. 1/4 cup all-purpose flour. 2 tbsp unsalted butter, cold. 1/2 tsp ground cinnamon.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine the flour, sugar, baking powder, and salt. In another bowl, beat together the softened butter, egg, milk, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. Divide the muffin batter evenly among the muffin cups, filling each about 2/3 full. For the crumb topping, in a separate bowl, mix together the sugar, flour, and ground cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the crumb topping evenly over each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
