Easy cauliflower bake that only requires a few ingredients: rice (around 2 cups), cauliflower (1 head), vegan sour cream or any kind of vegan cream (I’ve used the Dr. Oetker vegacream), herbs and spices you like.
I’ve made rice as I usually do as if it was a side dish, boiled the cauliflower, then waited for the two to cool down a bit before transferring it to an oven pan. I’ve mixed the vegan cream with garlic powder, oregano and a veggie mix and evenly put it on top of the cauliflower & rice base. You can decide how much cream you want, I went for 2 cans of that vegan cream (so around 250 g) and it was just enough.
I’ve baked them for about 45 minutes, until the top became a bit golden and crispy.
You can serve it with other veggies or tofu or leave it as it is. It’s tasty nevertheless. :)
