It only takes one bowl to make these vegan oatmeal cookies, and they don't need to be chilled or mixed. They're great for a quick snack or sweet treat!
Ingredients: 1 cup rolled oats. 1/2 cup all-purpose flour. 1/4 cup coconut sugar. 1/4 cup maple syrup. 1/4 cup melted coconut oil. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/4 cup chopped nuts or dried fruit optional.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Oats, flour, baking soda, salt, and coconut sugar should all be mixed together in a large bowl. Melt the coconut oil and add it to the dry ingredients. Mix everything together well. You can add chopped nuts or dried fruit if you want to. Place tablespoon-sized balls of dough on the baking sheet that has been prepared, leaving space between each cookie. Press down a little on each cookie with your fingers or the back of a spoon. When the edges are golden brown, it's done baking. Take it out of the oven and let it cool for 5 minutes on the baking sheet. Then, move it to a wire rack to finish cooling.
