Strawberry Banana Oatmeal for breakfast! This is SO yummy! I’m so glad I learned about eating in a way that’s TRULY healthy because there was a time in my life where I believed that to be “healthy”, a.k.a. thin, I’d never get to enjoy oatmeal again! That thinking was so wrong! Since I fully committed to not just a vegan diet but also a whole foods plant based diet I’ve been seeing a change. My energy is going up, my TMJ isn’t plaguing me daily, and I’m sleeping better. Now I feel like I’m truly on a path to healthy living. Plus there are so MANY wonderful bonuses. I’m no longer contributing to environmental degradation via animal farming or via the unsustainable practices prevalent in the production of processed foods, I’m no longer contributing to the suffering of animals, and my budget is looking healthier since I’m no longer grabbing whatever vegan fast/junk food I could find! Things are looking up folks! So not only is this oatmeal yummy, it’s a celebration! Recipe 1 cup rolled oats 1 small banana 1/2 cup strawberries 1 cup water 1 cup plant milk (optional) 1 Tbsp maple syrup Pinch salt Bring milk & water to a simmer, add oats and salt stir gently, watch closely and stir on occasion. Cook for 4 min, add sliced strawberries, cook until oats are tender (additional 1-2 min). Remove from heat add banana and maple syrup, enjoy.
