I made one of my current favorites last night, Vegan Wild Mushroom Stroganoff Soup from @rabbitandwolves but this time, I only used crimini ‘shrooms, added some homemade sliced seitan and instead of using pasta, I cut yuba skin into ribbons and used that! It was delicious! Even better as leftovers today! So glad I finally remembered to try the yuba as noodles!
