Rich and Creamy Vegan Nog

For the holidays, you can enjoy the taste of eggnog in the form of a dairy-free smoothie. This vegan nog smoothie is creamy and spiced, and it's great for a holiday breakfast or snack.

Ingredients: 1 cup almond milk. 1 ripe banana. 1/2 cup cashews soaked and drained. 2 Medjool dates pitted. 1/2 teaspoon vanilla extract. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cinnamon. Pinch of ground cloves. Pinch of salt. Ice cubes optional.

Instructions: In a blender, combine almond milk, ripe banana, soaked cashews, pitted Medjool dates, vanilla extract, ground nutmeg, ground cinnamon, ground cloves, and a pinch of salt. Blend until smooth and creamy, adding ice cubes if you want a colder smoothie. Taste and adjust the sweetness or spices as needed, adding more dates or spices if desired. Pour the Vegan Nog Smoothie into glasses, garnish with a sprinkle of nutmeg or cinnamon, and serve immediately.
