A super easy salad I’ve been throwing together for years - a healthy taco salad! 🥗 Dressing: plain Greek yogurt, lime zest and juice, and S&P. Toss with: Greens 🥬 Pinto beans (drained and rinsed) Tomatoes 🍅 Sweet bell pepper Green onion Corn (frozen or fresh or canned)🌽 Handful of crushed corn chips (I use hint of lime flavor) Also optional: cucumber 🥒 jalapeño, carrots 🥕, salsa, other kinds of beans or even chili. If you’re feeling unhealthy: use ranch dressing It’s extremely versatile. I have the greens ready in the fridge. I have the dressing mixed in one container and the pepper, corn, green onions in another and the pinto beans in another container. I cut the tomatoes when I want them. So it’s fast to assemble! And tasty. And healthy.
